Siphon (or Syphon) is one of the most spectacular methods of preparing coffee. Thanks to the combination of vacuum and pressure, you get a clean cup with a velvety texture and a complex aromatic profile.

 

Method:

  1. Preparation: Assemble the Siphon, placing the filter (fabric or metal) in the upper part and attaching it to the tube with the chain. Fill the lower part with hot water to reduce heating times.
  2. Turn on the heat source (e.g. stove or alcohol burner) under the lower bulb to bring the water to the boil.
  3. Once the water rises in the upper chamber due to pressure, lower the heat source slightly to stabilize the temperature.
  4. Add the ground coffee to the upper chamber and stir gently to even out the contact with the water.
  5. Leave to infuse for 1.30 – 2.00 minutes, stirring once or twice to improve the extraction.
  6. Remove the heat source. When the lower bulb cools down, the coffee will be automatically sucked out by the vacuum created, leaving the residues in the upper part.
  7. Remove the upper chamber, stir the coffee in the lower bulb and serve immediately.
