Specialty Coffee is a high-quality coffee, grown in optimal conditions, harvested and processed with care to maximize its organoleptic characteristics. The term is recognized internationally and is defined by the Coffee Quality Institute (CQI) and Specialty Coffee
Association (SCA) .
To be considered specialty , a coffee must obtain a score of at least 80/100 according to the SCA cupping protocol, which evaluates aspects such as acidity, body, sweetness, balance and absence of
primary defects.
Specialty coffees are distinguished by:
Traceability – Clear and certified origin, with details on botanical variety, altitude, processing method and producer.
Careful selection – Beans handpicked only at the perfect level of ripeness.

specialty , which use advanced roasting techniques to respect the aromatic profile of each batch. The roasting is studied based on specific parameters such as bean density, moisture content and extraction method
