Chemex is an extraction method that combines aesthetics and functionality. Thanks to the thicker filter than other methods, you get a clean and delicate cup, with a light body and great aromatic complexity.
Method:
- Place the paper filter into the Chemex, making sure the three-layered part is on the spout side. Rinse the filter with hot water to remove any paper residue and preheat the pitcher. Empty the water.
- Weigh the coffee and grind it to a medium/coarse grain size. The standard ratio is 30g of coffee to 500ml of water, but this can be adjusted to your preference.
- Pour the ground coffee into the filter and shake gently to level it.
- Bring the water to the desired temperature (92°-96° C).
- Blooming: Pour about double the weight of the coffee (e.g. 60ml for 30g) and make sure to wet all the grounds. Let it sit for 30-45 seconds to allow the gases to escape.
- Extraction: Continue pouring water in a circular motion, starting from the center and moving outward, avoiding the edges of the filter. Make slow, continuous pours until the desired total amount of water is reached.
- Let all the water drip through the coffee (total extraction time: 4-5 minutes).
- Remove the filter and stir the drink lightly to even out the flavor.
