In the Uraga district, in the renowned Guji area, the SNAP Specialty Coffee cooperative brings together over 230 small producers , active on lands that extend to 2000 meters above sea level . Over the years, thanks to constant investments in modern equipment and the push towards an innovative supply chain , the cooperative has raised the quality bar of the entire region, becoming a point of reference for Ethiopian excellence .
The natural process starts with rigorous manual harvesting, followed by careful drying on African beds for at least 17 days . The cherries are rotated regularly to ensure uniform drying, then left to rest for two months before being released for sale. This approach allows for the development of a clean and deep aromatic profile.
In the cup, notes of ripe plum and milk chocolate emerge clearly, in a balance that surprises with its roundness and clarity.
